Grilled Tuna Steaks
1 Tbls Honey
1/3 C Low Sodium Soy Sauce
1 tsp Grated Lemon Peel (this is key)
¼ C Lemon Juice
1 Tbls Grey Poupon Mustard
½ C Olive Oil
Combine ingredients in a sealable plastic bag. Add Tuna Steaks and marinade overnight.
Grill Tuna on direct heat 400-450 about 4 minutes each side. Baste steaks with remaining marinade. Makes enough marinade for about (2) 2lb Steaks.
Pizza Stuffed Meatloaf
2 lbs Ground Beef
1 lb Italian Sausage
2 tubes of Ritz Crackers
1 Can of Pizza Sauce
1 Bag of Mozzarella Cheese
1 Green Pepper
1 White Onion
Pepperoni (about 24 slices)
Combine beef, sausage, crackers, egg, salt, pepper, oregano and ½-can pizza sauce in mixing bowl. Mix well.
Lay out a sheet of wax paper. Place all of mixed meat on wax paper and press into a square. Leave a hardball size piece of mixed meat on the side you will use this later. On your square of meatloaf, add pepperoni, onion, green pepper, pizza sauce and mozzarella cheese. The square should be evenly covered with ingredients.
Roll the meatloaf into a log. Use remaining meat to cap ends and seam.
Cook indirect at 400-450. This will take about an hour. Internal temperature should be 155. Ten minutes before meatloaf is done sprinkle mozzarella cheese over the top.
Jimmy Dean Dip
1 Brick Velveeta Cheese (do not use low fat)
1 Tube of Jimmy Dean Breakfast Sausage
2 Cans Cream of Mushroom Soup
2 Cans of Ro-tel
1 Small can chopped black olives
Brown Jimmy Dean breakfast sausage. Drain fat. Drain juice off Ro-tel. Combine all ingredients in Crockpot. Stir occasionally. When cheese is melted serve with Tortilla Chips.
